The killer, who had no trouble pan-frying his victim in olive oil and herbs, couldn't stomach the perfectly presented steak tartare and demanded it was cooked.
Wendy Stewart, 36, recalled how Morley ordered the dish, thinking it was a posh steak.
"Of course steak tartare was finely minced uncooked beef. Anthony was horrified! He didn't like his meat raw," she said.
Chef Morley, 36, was this week convicted of butchering Damian Oldfield, 33, at his Leeds home after a court heard how he'd gnawed on lumps of the body, which he had diced and cooked medium rare.
He was sentenced to life with a minimum of 30 years, with Judge James Stewart QC branding the killing a "cold-blooded, savagely executed murder".
Morley's conviction has astounded Wendy. "I'm numb with shock to know he was a Jekyll and Hyde who was capable of such a thing," she said.

She didn't even realise he was gay when she dated him in the early 1990s- even though he was crowned the first ever Mr Gay UK in 1993, had lived with a man in his 50s prior to dating her, and worked as a dancer in gay clubs. Now living in the South of France, businesswoman Wendy met Morley at a Leeds nightclub when she was a student and he was a dancer.
"He was just wonderful to be with, a fun bloke with a cute face and a great smile," she said."Anthony had been living with an older man but I never thought of that as a gay relationship.
"I had no need to, he was a fantastic lover - better than many men.
"His dream had been to be a ballet dancer, but that was wrecked when he broke his ankle. But he made money from dancing in gay clubs."
Morley told her he'd entered the Mr Gay UK contest simply to promote himself as a model. Wendy said: "I went to the final in Blackpool but kept out of sight so I didn't spoil his chances - and he won! He was Mr Gay UK, but it was me he spent the night with, making love in our hotel room."
The couple even talked of marriage and children but they split when she went to work in France - and now she blames HERSELF for his flesh-eating crime.
She said: "If I hadn't abandoned Anthony, none of this would have happened. I should have kept in touch to help keep him normal."

I met the guy 2 years ago in a bar and he seemed odd, one minute had a boyfriend the next a girlfriend, he seemed very mixed up
