FOUL-MOUTHED chef Gordon Ramsay loved his mistress to dish up phone sex on a plate for him . . . and he didn't care where it was served.

Sarah Symonds today reveals how he even had it with her on a TRAIN thundering through the Channel Tunnel surrounded by passengers.

But it was all part of the wild cook's love of danger that Sarah learned to live with over the seven years of their secret affair.

"Gordon lives on the edge," she says. "He loves the risk and needs that adrenaline rush..

"And he's got an ego which tells him he's untouchable."

Phone sex was one of the mainstays of their relationship at times when they couldn't meet for the real thing. Ramsay has pretended in the past that he only ever did this with Tana.

In an interview with the News of the World in May 2004, he described her as "the only woman who can turn me on", before detailing their red-hot phone sex sessions when he is away from home.

But Sarah reveals how she had the F-word chef panting for more while he was on a Eurostar train from Paris to Waterloo at the end of this summer.

"Even though he was in a carriage with other people-and they were recognising him and approaching him-he persisted in having phone sex with me for nearly the whole journey," says Sarah.

"I remember it was a Sunday night, and it lasted for well over an hour because I was with a friend and she was wanting to go out. It was particularly dirty phone sex and involved pictures. I thought we should not be doing it because it was too dangerous.

"Previously in our relationship he had always insisted on taking great care when I emailed him on his BlackBerry because everything I sent went to a server and people could see what was being sent.

"During the phone sex conversation, the signal kept dropping. But he was so tenacious and kept calling back despite the fact that it must have been stressful because we kept losing the signal.

"Also people kept coming up to him because of who he was. But he was so reckless he wanted phone sex in public like that. Anyone could have overheard what he was saying. It was a really long conversation, for over one hour."

Sarah reckons the risk of being spotted drove Ramsay on. "He takes such risks in his day job that it's not rocket science to understand why he'd want to live his personal life like that too," she says.

"Gordon is the richest and most famous chef in the world. I don't think that it's that he's not happy at home, I just think he needs more.

"That's nothing against his wife. I'm sure he is happy in certain areas but he needs stimulation in others- otherwise he wouldn't cheat."

Bizarrely, their relationship intensified after Sarah became more and more renowned as a professional mistress after publishing her controversial book in April 2007.

She says: "I think when I wrote the book and started talking about the subject of infidelity in the media, I became more attractive to him, and more of a somebody he wanted to chase.

"There was a common link of infidelity-he's doing it, I'm writing about it. We'd get together often to either talk about it or partake in it.

"It also comes back to the risk factor, and the fact that Gordon likes me and he's fascinated by the topic I'm talking about.

"He is also buzzed by the thrill of a secret affair, and the sneaking around. But how reckless do you have to be to go out with someone like me? I have written a book about infidelity and I have spoken about my affairs before.

For a married man with four children he is playing high risk poker." Sarah's shocking revelations about father-of-four Ramsay's extra-marital romps shatter the top chef's meticulously constructed and false public image as a perfect husband and family man.

Over the last seven years-the same length of time he has conducted his affair-Ramsay has built up a multi-million pound fortune through a string of Michelin-starred restaurants, best-selling cook books and a flourishing TV career.

He is now the highest earning chef in the world and revenue from his restaurants, TV shows and deals is set to hit £100 million by 2010.

But the fall-out from the sex scandal is already starting to kick in.

Ramsay was due to jet off to LA in the New Year to film a new series of the US version of his show, Kitchen Nightmares. However filming has been now been put on ice until further notice. Meanwhile Sarah remains defiant about her revelations.

Despite her reputation with married men, she comes from a stable and loving family. Her father Mike, a retired sales director, and her mother Jean, who owned her own hair salon, have been married for 56 years. They live in Newport, Gwent.

Earlier this week newspaper reports had the chef assuring Tana he has only ever met Sarah four times. But Sarah retorts: "Gordon and I have had sex at least seven times. We have met up at least 18 times. He's phoned me hundreds of times over the last seven years. I've lost count of the number of times we've had phone sex.

"If I hadn't been living in LA and Gordon wasn't so busy with his restaurants and TV shows, we would have met for sex a lot more often." Sarah adds: "His wife might be able to forgive him a one-off but I am far from a one- off."

She insists she feels no guilt whatsoever about the affair."I can't feel guilty, I'm single," she says. "Gordon pursued me NOT the other way round-and I'm not the one who's married with four children. But if a wife can't keep her husband happy that's not MY fault.

"I never forced him on top of me. Somebody like Gordon Ramsay doesn't do anything he doesn't want to do. Surely the whole world knows that by now.

"In fact my relationship with Gordon is probably the reason their marriage has lasted this long. A mistress keeps a marriage going. Period.

"I'm sure that after spending time with me Gordon was able to go home and be a better father and husband because he was no longer looking for the things his wife didn't give him."

Sarah denies she is a homewrecker who deliberately targets married men. "I'm not attracted to married men. I'm attracted to successful, charismatic, high-powered men.

"Unfortunately they're usually married. But in this case not only has he been cheating on his wife with me, he's been cheating on me with another mistress too. He's a serial f******g cheat!"

In one interview in May 2005, Ramsay revealed: "I sleep with my wife every night so she knows I think she's beautiful. But you are allowed to look at the menu so long as you don't ever eat off it, as Tana says."

Sarah knows he has been eating off the menu with her for seven years.

"I've been Gordon Ramsay's dirty little secret. I've kept his secret and covered for him for all that time," says Sarah. "But not any more."
